pineapple chili, coleslaw, corn bread muffins
Tuesday: stuffed acorn squash, salad
Wednesday: tomato celery soup, grilled cheese
Thursday: tortellini in sauce, salad, garlic toast
Friday: hot dogs on the grill, maccaroni salad, baked beans
Saturday: steak on grill, baked potato, salad
Sunday: grilled chicken, veggie skewers, salad

Turkey Italian sausage is sometimes hard to find. I've frequently used regular Italian sausage and it comes out just as good. I regularly cut the recipe in half and use a mix of hot and mild sausage. One store I shop has a managed meat case, and I'll get 1/4 lb of each (for 1/2 batch) and tell the butcher to simply put it in the same bag. Other times, I'll use one each of the links (for 1/2 batch) and remove the sausage from the casing before cooking.

A busy week this week so DH will be doing the bulk of the cooking.

Monday: scrambled eggs on toast
Tuesday: fish, chips and salad
Wednesday: tray bake kransky, potatoes and broccolli
Thursday: Mexican lasagne
Friday: ham, cheese and potato pasties
Saturday: I am away
Sunday: baked bean and cheese jaffles.

We have hotdogs, tuna salad, pizza, salmon patties, soups, brats, and the Dolly Parton casserole with steamed veggies, salads, coleslaw, mac and cheese, and taters. Oh and Apple sauce and cantaloupe. Somehow I will match up things and call in dinner this week! LOL

I usually menu-plan on Sunday morning over coffee. But, since I'm having breakfast with DD tomorrow AM, thought I'd get my menu plan in order this morning, so I can grab any necessary items on my way home. Trying to use up meat from the freezer, since some of it has been in there a little too long. I vacuum seal my meats, so freezer burn is not too much of an issue.

April 8 - 14, 2024
Monday:
sausage (from freezer) ,peppers, and onions in crock pot with sauce, salad
Tuesday: burgers (from freezer) on the grill, macaroni salad, baked beans
Wednesday: stuffed squash (use up leftover sausage), salad
Thursday: grilled salmon from freezer), roasted potatoes, coleslaw
Friday: foil-wrapped sub sandwiches on grill, macaroni salad, leftover baked beans
Saturday: grilled chicken, veggie skewers, salad
Sunday: grilled pork chops (from freezer), baked sweet potato, coleslaw, baked apple for dessert

Sunday: Meatloaf (because I was supposed to make meatballs for my spaghetti yesterday but did not), Rice, Gravy, Harvard Beets
Monday: Pineapple Chili, Red Lobster Cheddar Bay Biscuits (from a box--purchased at Aldi), Salad
Tuesday: Leftovers
Wednesday: Cranberry Pork Roast, Potatoes, Gravy, Glazed Carrots
Thursday: Hawaiian Chicken Bake, Roasted Green Beans
Friday: Sloppy Joes, Cucumber Salad
Saturday: Brown Sugar Garlic Chicken, Rice, Broccoli Salad

I absolutely love this kind of chili. I do cut back a little on the cumin and use half mile and half spicy sausage. If you make it, let me know your thoughts.

The best laid plans ... I plan and purchase, and then things happen, plans are interrupted, meals get shifted. But at least there is (was) a plan in place and I could have made a nutritious meal.

Sunday:
grilled pork chops (from freezer), baked sweet potato, coleslaw, baked apple for dessert
Monday: grilled chicken, veggie skewers, salad
Tuesday: 1/2 pork roast (from freezer), sweet potato, coleslaw, peach cobbler (if I get ambitious)
Wednesday: out with friends for a wine tasting event
Thursday: widows group monthly dinner
Friday: cavatapi pasta, salad, garlic roll
Saturday: on the road (DNephew's last baseball game)
Sunday: cottage cheese, fruit plate, toast

This is why I stopped planning - food that I had thawed for dinner would go uneaten due to changes. Eventually it would go bad in the fridge.

I think we're having chicken cutlets tomorrow:)

That's when I shift the menu to the next day, or until what's in the refrig gets eaten. I've been planning to cook that half pork roast for weeks. It's still in the freezer. And luckily sweet potatoes don't go bad for weeks on end.

What I pulled from the freezer, thinking it was marinated pork steak, turned out to be an herb-marinated chicken breast. I opted for rice and a salad, in lieu of sweet potato and slaw. Still good, and used up something from the freezer. Only wish I'd labeled the package. Oops!

halimer- I really don't plan: M, T, Weds, Th., etc.
I more write a list saying: Here are the 4 things I have on hand to make then make them how it fits my schedule.
If I have meat in the fridge and I can't get to it, that's when that goes in the freezer (as long as it wasn't something I had defrosted).
Only when I 100% know I will be home, will I defrost something.

Here is what I have on hand for this week:
* Red Pepper Salmon patties
* Shrimp Scampi
* A chicken breast
* 2 small steaks
